Memphis and Nashville have a complicated relationship when it comes to BBQ, and Central BBQ is a living document of that tension. It started in Memphis, where the wet-sauced, slow-smoked tradition runs deep, and brought that approach to Nashville, where opinions about whose BBQ is better run equally deep.
The ribs hit the right notes — the dry-rubbed version gets a crust that earns it, the wet version is saucy without being cloying. The pulled pork is reliable. The brisket holds up. None of it is going to make you question everything you thought you knew about barbecue, but it's not trying to.
The locations feel consistent, which is harder to pull off than it sounds. Counter service, cold beer, sides that don't embarrass themselves. It's the BBQ you order when you want good BBQ without making it a whole project.
For a chain, that's a genuine achievement.
