Nashville BBQ has a reputation. Three places actually live up to it.

Tennessee BBQ gets talked about like it's universally great. It isn't. A lot of what passes for BBQ in Nashville is decent meat with good marketing — fine for lunch, not worth a detour. Martin's is the gold standard for whole hog in this city and earns that status every service. Peg Leg Porker has a specific philosophy — dry rub, hickory smoke, no shortcuts — and sticks to it. Shotgun Willie's is the sleeper on this list, smaller and less talked-about than the other two, and doing work that holds up. All three are consistent in a category where consistency is genuinely hard. That's why the list is three restaurants and not ten.
