Martin's is the gold standard for whole hog in this city and earns that status every service. Peg Leg Porker has a specific philosophy — dry rub, hickory smoke, no shortcuts — and sticks to it. Shotgun Willie's is the sleeper on this list, smaller and less talked-about than the other two, and doing work that holds up. All three are consistent in a category where consistency is genuinely hard. That's why the list is three restaurants and not ten.
